This Southwestern turkey skillet hits a massive 45 grams of protein per serving, takes exactly 15 minutes in a single pan, and tastes like the inside of an incredible burrito. The secret is using salsa not as a dip, but as a braising liquid.
The Salsa Braise Hack
Ground turkey is inherently dry. If you cook it in a pan until it's done, it turns into gravel. By adding half a cup of your favorite salsa directly to the pan after the turkey browns, you reintroduce intense moisture and acidity. The turkey absorbs the tomato juices, and the vegetables cook directly in that flavorful liquid.
The Build
- 1 lb Lean Ground Turkey: 93/7 is the sweet spot. 99% lean is sand.
- 1 Zucchini: Diced small. It cooks fast and bulks up the meal for almost zero calories.
- 1/2 Cup Black Beans: Rinsed. More protein and fiber.
- 1 tbsp Taco Seasoning: Use a low-sodium packet or make your own with chili powder, cumin, and oregano.
- 1/2 Cup Salsa: A thick, chunky salsa works best.
- 1/4 Cup Monterey Jack Cheese: Because life is too short to skip cheese.
The 15-Minute Execution
- Heat a large skillet over medium-high heat. Spray it lightly with oil.
